Seafood Paella for 4-6 people cooked on a special Paella cooker outdoors at your home in front of your guests. Petite lobster tails, large Texas Gulf Coast shrimp, chicken, chorizo, Andouille sausage, fresh live clams, fresh live mussels, genuine short-grained Spanish rice tinted with fragrant saffron and served in the cooking pan on a lazy susan on your dinner table.

Live Little Neck Clams from Cape Hatteras for 4-6 people cooked and served in a cast-iron kettle. The clams are cooked in a rich clam broth with fresh basil, garlic and other herbs… and loaves of fresh French Bread to dunk in the broth.

Tom Kha (Seafood) Thai-Style Soup
A Thai-Style Coconut Milk Seafood Soup for 4-6 people with Fresh Large Texas Gulf Shrimp, Mussels, Shitake Mushrooms, fresh Ginger, Lemongrass, Thai Basil and other fresh herbs. Spicy and creamy, this exotic Asian soup will really please you and your dinner guests! I will adjust the “heat” per your specifications.

Diddy T’s Texas Corn Bread (my family recipe)
My mother, affectionately known as Diddy, regularly made this rich Texas Corn Bread when I was growing up in the 1950’s. Texas stone-ground cornmeal, creamed corn, Poblano peppers, fire-roasted mild peppers, cheddar cheese, jalapenos and sour cream, baked and served in a Texas-shaped cast-iron cornbread pan. Available only with the purchase of an entree. Serves 4 people nicely. Includes 1/2 pound of Falfurrias Texas butter.
